Braised Carrot Chipotle Tacos

Braised Carrot Chipotle Tacos
1 tbsp. butter
1 lb. carrots, peeled and cut into julienne strips
3 cloves garlic, minced
1-2 canned chipotle peppers in adobo sauce, minced
1 tbsp. adobo sauce from can
2 tbsp. lime juice
8 small good quality flour tortillas
2 cups coleslaw mix
1/2 cup finely chopped red onion
1/2 cup raisins
1 tbsp. lime juice
1/2 tbsp. olive oil
Fresh cilantro leaves

This recipe was a hit in our test kitchen. The SE staff loved it!

Prep: 20 minutes, Cook: 15 to 20 minutes, Serves: 4 to 6

1. Melt butter in a large skillet over medium heat. Add carrots, garlic, peppers and lime juice. Reduce heat to low and tent skillet with foil. Cook for 15 to 20 minutes or until carrots are tender, stirring occasionally.

2. Meanwhile, stir together all cabbage slaw ingredients in a medium bowl.

3. To assemble tacos, spoon carrot mixture into warm tortillas and top with cabbage slaw, guacamole and cilantro.
