Tomato and Melted Cheese Soup and Sandwich Bowls

Tomato and Melted Cheese Soup and Sandwich Bowls
3 (9-oz.) Nob Hill Trading Co. Sourdough Soup Bowls (in our Bakery)
1 tbsp. butter softened
1 cup sharp Cheddar cheese finely shredded
1 (24-oz.) container Nob Hill Trading Co. All-Natural Sacratomato Tomato Bisque (in our Deli)
1/2 cup corn kernels
2 cups fresh spinach coarsely chopped
3 tbsp. fresh basil snipped

Grilled cheese soup all in one!
Prep: 10 minutes Cook: 15 minutes Serves: 3

1. Preheat oven to 425°F. Cut a circle out of the top of each bread bowl and cut away bread from the inside, leaving a 1/2-inch rim around the outside. Place bowls and tops on a baking sheet and spread butter on inside of bread bowls. Press cheese onto butter and bake for 10 minutes.
2. Place soup and corn in a medium saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Add spinach and basil and cook for a minute more to wilt. Spoon into bread bowls.
