Barbecue Beef Sandwiches
3½ lbs. Raley's Boneless Beef Chuck Roast
1 medium onion, peeled and chopped
1 cup ketchup
1/3 cup Pickapeppa Sauce (in the condiments section)
1/3 cup brown sugar
2 tbsp. spicy brown mustard
1/2 tsp. pepper
8 small round rolls

Prep: 15 minutes, Cook: 5 to 6 hours, Serves: 8

1. Trim beef to remove large pieces of fat; cut into cubes. Place in a large slow cooker with onion.

2. Whisk together remaining ingredients except rolls and pour over meat. Cover and cook on high for 5 to 6 hours or until meat shreds easily.

3. Remove from cooker with a slotted spoon and shred with a potato masher or 2 forks. Return to cooker and stir well.

4. Serve on rolls.
