Cajun Salmon with Greens and Black Eye Peas

Cajun Salmon with Greens and Black Eye Peas
Olive oil cooking spray
2 (12- oz.) packages Full Circle Natural Salmon, thawed*
1½ tsp. Cajun seasoning blend
1/2 tsp. garlic salt
3/4 cup cornmeal
2 cups Cut N Clean Country Greens (in our Produce Dept.)
1 (15- oz.) can black eye peas, rinsed and drained
1/2 cup 1/4-inch diced bell pepper (any color)
1/4 cup minced red onion
1/4 cup Briannas Real French Vinaigrette

Prep: 20 minutes, Cook: 10 to 15 minutes, Serves: 4

1. Preheat oven to 400°F and line a baking sheet with foil coated with cooking spray. Season salmon with Cajun seasoning and garlic salt. Coat with cooking spray and roll in cornmeal. Repeat steps and place on baking sheet.

2. Cook for 10 to 15 minutes or until fish is cooked to your liking, coating with cooking spray twice during cooking. Turn oven to broil and cook for 2 minutes more or until golden brown.

3. Stir together remaining ingredients in a medium bowl and serve with salmon.

*1½ lbs. thin boneless, skinless chicken breasts may be used in place of salmon.
