Seitan Pineapple Fried Rice

Seitan Pineapple Fried Rice
1 cup Lundberg Wild Blend Rice
3 tbsp. canola oil divided
1 large onion thinly sliced and quartered
1 (8- oz.) package Sweet Earth Traditional Seitan Strips
1 cup julienne carrot strips (in our refrigerated Natural Foods case)
1 tbsp. fresh ginger grated
4 cloves garlic minced
1 (8- oz.) can pineapple slices in juice drained and cut into 1/4-inch pieces
2 eggs well beaten
3 tbsp. soy sauce
3 green onions sliced
Torn fresh cilantro or basil leaves

Our tasters were amazed how much the seitan tasted like
meat. But if you’re not a fan, swap out the seitan with
1/2 lb. cooked chicken, pork or beef strips.

Prep: 20 minutes Cook: about 1 hour Serves: 6

1. Cook rice according to package directions.
2. Meanwhile, heat 2 tbsp. oil in a very large nonstick skillet over medium-high heat. Add onion and seitan and stir-fry for 5 minutes, or
until onion is soft. Add remaining oil, carrots, ginger, garlic and pineapple; stir-fry for 2 to
3 minutes more.
3. Push vegetables to one side of skillet and add eggs. Cook until scrambled, then stir into vegetables. Add cooked rice, soy sauce and green onions and stir-fry for 3 minutes more or until rice is very hot. Top with cilantro or basil.
