Banh Mi Dogs
1 cup carrots shredded
1 cup cucumber julienne strips
1/4 sliced green onions
1/2 cup rice vinegar
1/4 cup sugar
1 jalapeno pepper, very thinly sliced
8 hot dogs
8 potato hot dog buns, warmed
Fresh cilantro leaves

Keep it fresh and serve as is, or slather buns with mayonnaise to make it traditional.

Prep: 15 minutes, Marinate: 10 minutes, Cook: 5 minutes, Serves: 8

1. Stir together carrots, cucumber, green onions, vinegar, sugar and jalapeño in a medium bowl. Let marinate for 10 minutes, then drain liquid.

2. Grill hot dogs over medium-high heat for 5 minutes or until heated through.

3. Open buns and fill with hot dogs and vegetable mixture.
