Pumpkin Cream Cheese Parfaits

Pumpkin Cream Cheese Parfaits
1 cup canned pumpkin
1 (8- oz.) package 1/3 less fat cream cheese (Neufch√Ętel cheese)
5 tbsp. pure maple syrup divided
6 tbsp. honey
3/4 tsp. cinnamon divided
1/8 tsp. nutmeg
1 cup heavy cream
1/3 cup Diamond Pecan Pie Pecans chopped
Prep time: 20 minutes
No cooking required!

Combine pumpkin, cream cheese, 3 tbsp. maple syrup, honey,
1/2 tsp. cinnamon and nutmeg in a medium bowl; whisk
together until smooth. In a medium bowl, beat heavy cream
until soft peaks form. Add remaining 2 tbsp. syrup and 1/4
tsp. cinnamon and beat until stiff peaks form. Spoon half of
the pumpkin mixture into 6 parfait glasses. Top with half of
the whipped cream and half of the pecans. Repeat layers and
top with pecans. Chill until ready to serve.

Makes 6 servings.
