Chicken with Apple-Walnut Stuffing

Chicken with Apple-Walnut Stuffing
3 tbsp. butter, divided
1/2 cup chopped onion
1/2 cup sliced celery
1 medium Granny Smith apple, peeled and sliced
8 cups 1 -inch cubes French bread, lightly toasted
1/2 cup Raley's walnuts, chopped and toasted
1 (14.5- oz.) can chicken broth
1/2 cup apple juice
3 tbsp. pure maple syrup, divided
1 tbsp. chopped fresh rosemary, divided
1 tbsp. chopped fresh thyme, divided
1 tbsp. chopped fresh parsley, divided
4 Raley's boneless, skinless chicken breast fillets
Salt and pepper to taste

Prep: 20 minutes,  Cook: 50 minutes, Serves: 4

1. Preheat oven to 350°F and butter an 11-by-7-inch baking dish.

2. Melt 2 tbsp. butter in a medium skillet. Add onion and sauté for 5 minutes. Add celery and apple and cook for 5 minutes more.

3. Place bread cubes in a large bowl; add vegetables, walnuts, broth, juice, 2 tbsp. maple syrup and half of the herbs. Mix well and place in prepared baking dish; set aside.

4. Sprinkle chicken with salt, pepper and remaining herbs. Add remaining butter, maple syrup and chicken to the skillet; cook chicken for 3 to 4 minutes per side or until golden brown.

5. Place on top of stuffing and bake for 30 minutes, ensuring internal temperature of chicken reaches 165°F.
