Harvest Chicken with Tomatoes and Corn

Harvest Chicken with Tomatoes and Corn
1 lb. chicken tenders
1 cup chopped onion
2 tbsp. butter or olive oil
2 ears corn, husked
2 medium fresh tomatoes, seeded and chopped
1/2 cup Chardonnay
1/2 cup chicken stock
1/4 cup pesto
Garlic salt to taste
Chopped fresh basil

Add a sprinkle of toasted walnuts for extra crunch and flavor!

Prep: 15 minutes  Cook: 15 minutes  Serves: 4

1. Cut corn kernels off cob and place in a medium bowl; set aside.

2. Brown chicken and onion in a large skillet in butter. Add reserved corn and tomatoes and cook for 5 minutes more.

3. Add Chardonnay, stock and pesto and bring to a boil; reduce heat slightly and simmer until excess liquid has cooked off. Season with garlic salt to taste and sprinkle with basil, if you like.
