Sun-Dried Tomato  Quinoa Risotto

Sun-Dried Tomato Quinoa Risotto
1 tbsp. butter
1 cup quinoa, rinsed and drained
1/2 cup chopped onion
2 cloves minced garlic
3 cups chicken stock
1/3 cup wine
1/4 cup shredded Parmesan cheese
3 tbsp. California Sun•Dry Sun-Dried Tomato Spread

Prep: 10 minutes  Cook: 30 minutes  Serves: 4

Melt 1 tbsp. butter in a large skillet over medium-heat. Add 1 cup rinsed and drained quinoa, 1/2 cup chopped onion and 2 cloves minced garlic to skillet and cook for 5 minutes. Add 3 cups chicken stock a little at a time, cooking and stirring until excess liquid has cooked off before adding more stock. Stir in 1/3 cup wine and cook off excess liquid. Stir in 1/4 cup shredded Parmesan cheese and 3 tbsp. California Sun•Dry Sun-Dried Tomato Spread; cook until very hot.
