Ricotta Waffles

Ricotta Waffles
2 cups flour
2 tbsp. sugar
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1½ cups milk
1 cup ricotta cheese
1/4 cup melted butter

Prep: 10 minutes, Cook: 3 to 4 minutes, Serves: 8 

1. Stir together dry ingredients in a large bowl. Stir in milk, ricotta and butter.  

2. Pour into a lightly greased hot waffle iron and cook until golden brown. Serve topped with Mimosa Pulled Pork or with Pumpkin Spice Butter (see separate recipes).
