Italian Penne Pasta Salad

Pesto Penne Pasta Salad
1 (13.25- oz.) box Raley's Whole Grain Penne Pasta
2 cups lightly packed 1/2-inch strips curly kale
3/4 cup quartered and thinly sliced red onion
1/2 cup light balsamic vinaigrette dressing
3 tbsp. Raley's Pesto (near refrigerated pasta)
2 tbsp. minced California Sun-Dry Smoked Sun-Dried Tomatoes
1 (6.25- oz.) jar marinated artichoke hearts, chopped (reserve marinade)
1 (2.2- oz.) can sliced ripe olives, drained
Raley's Shredded Parmesan Cheese (optional)

Prep: 15 minutes, Cook: 9 minutes, Serves: 6

1. Cook pasta for 9 minutes in boiling water; drain well and rinse with cold water to quickly cool. Drain well again.

2. Place in a large bowl with remaining ingredients, including marinade from artichokes. Toss well to coat all ingredients with dressing. Cover and chill until ready to serve.
