Lemon Harissa Spiced Potatoes

Lemon Harissa Spiced Potatoes
2 tbsp. Meyer lemon juice
1 tbsp. extra virgin olive oil
1 tsp. sea salt
1 tsp. paprika
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. ground caraway seeds
1/4 tsp. cayenne pepper
2 cloves garlic, minced
1 (28- oz.) bag honey gold potatoes (or baby yellow or red potatoes), halved
1 cup 1/2-inch diced red bell pepper
Chopped fresh parsley (optional)

Prep: 15 minutes, Cook: 30 minutes, Serves: 6

1. Preheat oven to 400°F and spray a large baking sheet with nonstick cooking spray. Stir together all ingredients except potatoes, peppers and parsley in a large bowl. Add potatoes and toss well to coat. 

2. Place on prepared baking sheet and cook for 20 minutes, stirring halfway through cooking. Stir in peppers and cook for 10 minutes more or until potatoes are soft. Sprinkle with parsley, if you like.
