Lemon Bars with Chia Oat Crust

Lemon Bars with Chia Oat Crust
1 cup quick oats
1/2 cup flour
1/3 cup better-for-you buttery spread (such as I Can't Believe It's Not Butter), melted
1/2 cup light brown sugar
2 tbsp. chia seeds
1 tsp. finely grated Meyer lemon zest
1 cup + 2 tbsp. sugar
1/2 cup Meyer lemon juice
4-1/2 tbsp. Heart Smart Bisquick
1-1/2 tsp. vanilla extract
3 eggs
Powdered sugar (optional)

Prep: 20 minutes, Cook: 45 minutes, Serves: 12

1. To prepare crust, preheat oven to 350°F and coat an 8-inch baking pan with nonstick spray. Cut a square of parchment paper to fit the bottom of the pan and press in firmly.

2. Stir together oats, flour, buttery spread, brown sugar, chia seeds and lemon zest in a medium bowl. Press firmly into the bottom of prepared dish and bake for 20 minutes; set aside. 

3. To prepare filling, whisk together sugar, lemon juice, Bisquick, extract and eggs. Pour over crust and bake for 25 minutes or until set.

4. Cool completely in pan before cutting into squares. Dust with powdered sugar, if you like.
