Pork Chops with Mango, Raspberry and Chipotle

Pork Chops with Mango, Raspberry and Chipotle
Ingredients
2 tbsp. butter
4 Raley's fresh boneless center cut pork loin chops
Freshly ground sea salt and pepper to taste
1/2 cup minced onion
1/4 cup fresh raspberries
1 minced canned chipotle pepper, plus 1 tbsp. adobo sauce from can
1 ripe mango, peeled, pitted and diced
Directions

Prep: 10 minutes, Cook: 20 minutes, Serves: 4

1. Melt butter in a large skillet over medium heat. Season pork with salt and pepper and add to skillet. Cook for 10 minutes, then turn.

2. Add onion, raspberries, chipotle pepper, adobo sauce and mango to skillet. Cook for 10 minutes more or until pork is cooked through, stirring occasionally.
