Skillet Masa Cakes

Skillet Masa Cakes
1 cup masa harina (corn flour)
3/4 cup chicken stock
1/2 cup coarsely shredded pepper Jack cheese
2 tbsp. butter, softened
1/2 tsp. baking powder
1/4 tsp. garlic salt
Olive oil cooking spray
Shredded rotisserie chicken, warmed
Salsa (optional topping)
Guacamole (optional topping)
Sour cream (optional topping)

Prep: 15 minutes, Cook: 10 minutes, Serves: 4

1. Stir together masa harina, stock, cheese, butter, baking powder and garlic salt in a medium bowl. Shape into four (1/2-inch thick) patties.

2. Coat well with olive oil cooking spray and cook over medium heat in a large nonstick skillet for 5 minutes on each side or until golden brown.

3. Serve immediately with shredded warm rotisserie chicken mixed with a little salsa. Top with salsa, guacamole and sour cream, if you like.
