Celery Apple Salad with Golden Raisin Vinaigrette

Celery Apple Salad with Golden Raisin Vinaigrette
Ingredients
Dressing:
3 tbsp. extra virgin olive oil
2 tbsp. rice vinegar (unseasoned)
2 tbsp. golden raisins
1/4 tsp. sea salt
Freshly ground pepper to taste

Salad:
2 cups thin strips Fuji apple
1 cup thin strips celery
1 medium shallot, halved and thinly sliced
1/3 cup sliced almonds, toasted
Directions

Prep: 15 minutes, Serves: 4

1. Puree all dressing ingredients in a small blender or food processor.

2. Place all salad ingredients in a medium bowl and drizzle with dressing; toss well to coat.
