Chicken Tikka Masala

Chicken Tikka Masala
1½ cups plain full fat yogurt
3/4 cup coarsely chopped fresh cilantro leaves and stems
2 tbsp. lemon juice
2 tbsp. extra virgin olive oil
1 tbsp. minced fresh ginger
1 tbsp. minced garlic
2 tsp. ground coriander
2 tsp. ground cumin
2 tsp. paprika
2 tsp. sea salt
2 tsp. Raley's Garam Masala Seasoning
1 tsp. black pepper
1 tsp. cayenne pepper
1/2 tsp. cinnamon
2 lbs. Raley's fresh boneless, skinless chicken breasts, pounded slightly and cut into 4-inch pieces
Tikka Masala Indian Simmer Sauce (we like Maya Kaimal), warmed

We’ve given this a springtime twist by cooking it on the grill.

Prep: 10 minutes, Marinate: several hours or overnight,
Cook: 8 minutes, Serves: 6

1. Place all ingredients except chicken and sauce in a large resealable plastic bag. Squeeze bag to mix ingredients and place chicken in bag. Seal and refrigerate for several hours or up to 2 days. (The longer the marinate time, the more flavor.)

2. Remove chicken from bag and scrape off excess marinade. Cook on a well-oiled grill over medium-high heat for 4 minutes on each side or until chicken is cooked through. Serve with simmer sauce.
