Quick Curried Red Lentil Soup

Quick Curried Red Lentil Soup
4 cups vegetable broth
1-1/4 cups red lentils (bulk bin #660)
1 cup chopped carrots
1 cup chopped tomato
1 cup chopped onion
1 (12.5-oz.) jar Maya Kaimal Madras Curry Sauce
1/4 tsp. cayenne pepper or to taste

Prep: 15 minutes, Cook: 1 hour, Serves: 6

1. Stir together all ingredients in a large pot and bring to a boil. Reduce heat and simmer, covered, for 1 hour.

2. Serve with warm naan bread, adding additional broth if needed, as this soup will thicken as it stands.
