Sweet Marinated Italian Peppers

Sweet Marinated Italian Peppers
2 (10-oz.) packages Melissa's Sweet Red Kapia Peppers
1 tbsp. extra virgin olive oil
1½ tsp. chopped fresh mint
2 cloves garlic, minced
Freshly ground sea salt and pepper to taste

Serve these pretty peppers on crusty baguette slices, in sandwiches or in a pasta salad.

Prep: 20 minutes, Cook/Stand: 16 to 18 minutes,
Marinate: 2 hours, Serves: 8

1. Grill peppers over high heat for 6 to 8 minutes or until well charred on all sides, turning frequently. Place in a paper bag and fold over top; and let stand for 10 minutes.

2. Remove skins, stems and seeds and cut peppers into 1/2-inch strips. Place in a large bowl with remaining ingredients. Cover and refrigerate for at least 2 hours or up to 1 week.
