Veggie Mac and Cheese Quiche

Veggie Mac and Cheese Quiche
1½ cups sharp Cheddar cheese, divided
1/2 cup panko breadcrumbs
1/2 cup chopped smoked almonds
1½ cups fat-free or regular half & half
2 eggs
3/4 cup shredded smoked Gouda cheese (in our Deli)
3/4 cup very small broccoli florets
1/3 cup penne pasta, cooked according to package directions
1/4 cup minced shallots
1/4 tsp. garlic salt
Pepper to taste

Prep: 30 minutes, Cook: 40 minutes, Serves: 4  

1. Preheat oven to 350°F. Stir together 1/2 cup Cheddar cheese, breadcrumbs and smoked almonds in a medium bowl. Press onto the bottom and sides of a disposable pie tin. Cover with plastic wrap and press again very firmly. Remove plastic and cook for 10 minutes.

2. Whisk together half & half and eggs in a large bowl, then stir in remaining ingredients.

3. Pour into cooked crust and cook for 20 minutes. Tent with foil and cook for 10 minutes more or until quiche is set in the center. Wrap in heavy-duty foil to keep warm. Serve warm or at room temperature.
