Mediterranean Pita Egg Pizza

Mediterranean Pita Egg Pizza
2 pita bread rounds
1/2 cup hummus
1/2 cup good quality marinara sauce
1/2 cup small torn pieces fresh mozzarella cheese
2 fried eggs
Snipped fresh parsley (optional)

Prep: 10 minutes, Cook: 10 minutes, Serves: 2 

1. Preheat oven to 425°F and line a baking sheet with foil. Place pita bread on baking sheet. Spread each with equal amounts of hummus and marinara and sprinkle with cheese.

2. Bake for 10 minutes or until cheese is melted and all ingredients are hot. Top with eggs and sprinkle with parsley, if you like.
