Cajun Cornmeal Pecan Crusted Tofu

Cajun Cornmeal Pecan Crusted Tofu
1 package extra firm tofu, cut into 4 equal rectangles
1/2 cup Louisiana Seasoned Crispy Fish Fry
1/4 cup finely chopped pecans
1/2 tsp. Cajun seasoning
1/4 cup flour
1 egg, beaten
1/3 cup mayonnaise
2 tbsp. honey
2 tbsp. cider vinegar
1 (14- oz.) bag Fresh Express 3 Color Deli Cole Slaw
Vegetable oil for frying

Add 1 tsp. Cajun seasoning blend to coating mixture for extra spice!

Prep: 20 minutes, Cook: about 8 minutes, Serves: 4  

1. Press tofu between several layers of paper towels to remove excess moisture. Place fish fry, pecans and seasoning in a shallow dish. Place flour and egg in two separate shallow dishes.

2. Dip each piece of tofu into flour, then egg, then pecan mixture. Set aside.

3. Stir together mayonnaise, honey and vinegar in a medium bowl. Add slaw and toss well to coat.

4. Heat about 1/2-inch of vegetable oil in a medium skillet over medium-high heat. Add tofu and cook for about 4 minutes on each side or until golden brown.

5. Drain on paper towels and serve immediately over slaw.
