Cranberry Orange Mulling Mix

Cranberry Orange Mulling Mix
2 large oranges, rinsed
2 whole nutmeg
2 oz. cinnamon sticks (about 8 large)*
2 tbsp. whole all spice
2 tbsp. whole cloves
3/4 cup dried cranberries (bulk bin #608)
1/3 cup The Ginger People Crystallized Ginger

Wrap in clear cello bags or decorative boxes or tins. Make sure to include mulling instructions.  

Prep: 20 minutes, Cook: 1 hour total, Makes: 10 packets

1. Preheat oven to 300°F. Cut away just the bright orange part of the peel with a small sharp knife, then cut into 1/4-inch wide strips. Place strips on a large baking sheet and cook for about 30 minutes or until very dry.

2. Place nutmeg, cinnamon sticks, allspice and cloves in a gallon-size freezer bag; fold over top. Place on a dishtowel and pound with a meat mallet or a small heavy skillet until spices are coarsely crushed. Add dried orange peel, cranberries and ginger to bag and mix well.

3. Place about 1/3 cup into individual packets such as cheesecloth squares or loose tea bags. Tie tightly with kitchen string to enclose.

4. Simmer 1 packet in 1 quart of apple cider, wine or pomegranate juice for 30 minutes; discard mulling spice packet. Serve warm.

*The larger cinnamon sticks found in the Hispanic section of the grocery store are inexpensive and softer, making them easier to crush.
