Vegetarian Mushroom Herb Gravy

Vegetarian Mushroom Herb Gravy
Ingredients
2 tbsp. butter
1/2 cup chopped onion
1 clove garlic, minced
4 oz. baby bella mushrooms, rinsed and coarsely chopped
1 tbsp. flour
2 cups vegetable broth
1/4 cup white wine
1/2 of a .75 oz. package Monterey Porcini Dried Mushrooms (in our Produce Dept.), chopped
1/4 cup whipping cream
1/2 tsp. soy sauce
1/2 tsp. dried thyme
1/2 tsp. poultry seasoning
Directions

Prep: 20 minutes, Cook: about 45 minutes, Makes: 2 cups

1. Melt butter in a large saucepan over medium heat. Add onion and cook for 10 minutes. Add garlic and baby bella mushrooms; cook and stir for 5 minutes more. Stir in flour and cook for 2 minutes.

2. Slowly stir in broth, then add wine and dried mushrooms. Reduce heat and simmer, covered, for 20 minutes.

3. Carefully puree in a blender* or with an immersion blender until smooth. Transfer back to saucepan and bring to a boil. Stir in cream, soy sauce, thyme and poultry seasoning and let cook for 5 minutes more. 

*Use caution when blending hot liquids. Hold 
blender lid down with a kitchen towel while blender is running.
