Smoked Salmon Mascarpone Crostini

Smoked Salmon Mascarpone Crostini
Ingredients
1 cup halved and thinly sliced red onion
3 tbsp. white wine vinegar
2 tbsp. orange or apple juice concentrate
1 tbsp. white balsamic vinegar
12 (1/4 -inch thick) slices Nob Hill Trading Co. Sweet French Baguette, lightly toasted
1/2 cup mascarpone cheese
1 (4- oz.) package thinly sliced smoked salmon (lox)
1 cup baby arugula
Directions

Prep: 20 minutes, Cook: 15 seconds
Chill: 3 hours or overnight, Serves: 6

1. Blanch onion in boiling water for 15 seconds until slightly soft but still crisp. Drain well and place in a small bowl with wine vinegar, juice concentrate and balsamic vinegar. Cover and refrigerate for at least 3 hours or overnight. Drain off liquid.

2. Spread baguette slices with equal amounts of mascarpone cheese. Top with salmon, arugula and pickled onion.
