Crispy Cod Croquettes

Crispy Cod Croquettes
1 (12- oz.) package Full Circle Alaskan Wild Cod Fillets, thawed
1 cup Progresso Italian Style Panko Bread Crumbs, divided
1/3 cup roasted red peppers, minced
1/4 cup minced shallots
1 tbsp. Raley's Basil Pesto
1 tbsp. chopped fresh Italian parsley
3 eggs, divided
1/2 cup flour
Vegetable oil for frying
Lemon wedges (optional)

Prep: 20 minutes, Stand: 30 minutes, Cook: 6 to 8 minutes, Serves: 6  

1. Press cod between several layers of paper towels until very dry. Finely chop and place in a medium bowl. Gently stir in 1/4 cup bread crumbs, roasted peppers, shallots, pesto, parsley and 1 egg.  

2. Press firmly into 6 patties. Dredge each in flour, then in remaining beaten eggs, then in theremaining bread crumbs; let stand for 30 minutes.

3. Heat 1 inch oil in a large skillet over medium-high heat. Lightly fry croquettes for 3 to 4 minutes on each side or until golden and crisp. Drain on paper towels and serve immediately with lemon wedges.
