Ginger Spice Cookies

Ginger Spice Cookies
1/2 cup butter, softened
1/3 cup brown sugar
1 tsp. vanilla extract
1-1/4 cups flour
1/2 tsp. ground cinnamon
1/2 tsp. ginger
1/2 tsp. cloves
1/2 cup The Ginger People Crystallized Ginger Chips, finely chopped
2 tbsp. The Ginger People Ginger Spread, divided

Prep: 20 minutes, Chill: 30 minutes, Cook: 8 to 10 minutes
Makes: 2 dozen tiny cookies 

1. Beat butter and brown sugar in a large bowl until light and fluffy. Beat in vanilla.

2. Stir in flour and spices, then cover and refrigerate for at least 30 minutes.

3. Preheat oven to 350°F and line 2 baking sheets with parchment paper. Roll dough into 1/2-inch balls, then roll in chopped ginger chips. Place on baking sheets and make a small indentation in the center of each with your pinky or the end of a wooden spoon. Add 1/4 tsp. ginger spread to each indentation.

4. Bake for 8 to 10 minutes or until cookies are lightly browned and cooked through.
