Sausage, Onion and Cheddar Oatmeal

Sausage, Onion and Cheddar Oatmeal
4 cups water
2 cups rolled (old fashioned) oats
Freshly ground sea salt to taste
Freshly ground pepper to taste
1 tbsp. butter
1 cup chopped onion
1 (12- oz.) package Aidells Chicken Apple Sausage, thinly sliced
2 cups shredded sharp Cheddar cheese, divided

Prep: 15 minutes, Cook: 15 minutes, Serves: 4  

1. Stir together water and oats in a medium saucepan and bring to a boil. Reduce heat and simmer, covered, for 5 minutes. Season with salt and pepper and keep warm.

2. Meanwhile, melt butter in a large skillet over medium heat. Add onion and cook for 5 minutes, stirring occasionally. Increase heat to medium-high and add sausage to skillet. Cook for 5 minutes more to lightly brown.

3. Stir 1½ cups cheese into oatmeal and top with onion mixture, sausage andremaining cheese.
