Honey Apple Shrub
1 lb. apples (about 3 apples), cut into cubes
3/4 cup honey
1 cup cider vinegar

If you like tart, choose Granny Smith apples. Prefer more sweetness? Choose Honeycrisp or Fuji. Make sure you use a sanitary prep area, container and utensils and remember to wash fruits before preparing.

Prep: 10 minutes, Marinate: 4 to 5 days, Makes: 1½ cups 

1. Cover apples in honey in a medium bowl and stir well. Add vinegar and stir until well combined. Cover and refrigerate for at least 8 hours.

2. Remove mixture from refrigerator and strain through a mesh sieve to remove chunks. Pour strained mixture into a clean bottle or jar. Stir again and refrigerate for 3 to 4 more days. 
3. Keep refrigerated until ready to use, for up to 1 month. Discard shrub immediately if off odors or colors develop, if it’s giving off any gases or bubbling.
