Truffled Corn

Truffled Corn
1/4 cup butter
1 cup chopped shallots
1 cup chopped baby bella mushrooms
4 cups frozen corn, thawed
1 tbsp. chopped fresh rosemary
1 tsp. garlic salt
Freshly ground pepper to taste
1 tbsp. white truffle oil
Grated Parmesan cheese

Prep: 10 minutes, Cook: 15 minutes, Serves: 8

1. Melt butter in a large saucepan over medium heat. Add shallots and mushrooms. Cook, stirring frequently, for 10 minutes or until vegetables are soft. Add corn, rosemary and garlic salt; cook for 5 minutes more.

2. Season to taste with freshly ground pepper and drizzle with truffle oil. Top with grated Parmesan cheese, if you like.
