Olive Brie Cups

Olive Brie Cups
1/4 cup Mezzetta Applewood Smoked Olives
2 tbsp. Cat Cora Eggplant Tapenade
1 tbsp. minced roasted red peppers
1 tbsp. minced shallots
1/4 tsp. herbes de Provence
2 (1.9- oz.) boxes Athens Mini Fillo Shells
6 oz. Brie cheese

Prep: 10 minutes, Cook: 10 minutes, Serves: 10

1. Coarsely chop olives. Stir in tapenade, roasted red peppers, shallots and herbes de Provence.

2. Place fillo shells on a small baking sheet and fill with olive mixture. Slice cheese and place over olive mixture. Bake at 400°F for 10 minutes or until hot and bubbly.
