Cheese Corn Spoonbread

Cheese Corn Spoonbread
1 (8.5- oz.) box Jiffy Corn Muffin Mix
3/4 cup milk
2/3 cup shredded sharp Cheddar cheese
1/3 cup ricotta cheese
1/3 cup shredded Parmesan cheese
1/3 cup corn kernels
1/3 cup sliced green onions
2 eggs, yolks and whites separated

Prep: 15 minutes, Cook: 30 minutes, Serves: 6

1. Stir together muffin mx, milk, Cheddar cheese, ricotta cheese, Parmesan cheese, corn kernels, green onions and egg yolks.

2. Beat egg whites until very stiff and lightly fold into mixture.

3. Spread in a buttered 1-quart casserole and bake at 350°F for 30 minutes.
