Breakfast Potato and Egg One Dish

Breakfast Potato and Egg One Dish
3/4 lb. Yukon gold potatoes, very thinly sliced
1 cup quartered and thinly sliced onion
8 eggs
1/2 cup plain, fat-free yogurt (preferably Greek)
1/2 tsp. Italian herb seasoning
1/2 tsp. garlic salt
1½ cups shredded reduced-fat sharp Cheddar cheese
1/2 cup real bacon bits or crisp crumbled bacon
1/4 cup diced bell pepper
1/4 cup sliced green onions

Thirty minutes from start to finish. Easy to prepare and get out the door on time!

Prep: 15 minutes, Cook: about 15 minutes, Serves: 6 to 8

1. Spray an 8-inch microwave-safe baking dish with nonstick cooking spray. Place potatoes and onions on the bottom of the dish; cover and microwave on HIGH for 7 minutes.

2. Whisk together eggs, yogurt, herbs and garlic salt. Stir in remainingingredients and pour over potatoes. Cover and microwave on HIGH for 7 minutes more or until eggs are set in the center.

3. Wrap baking dish in heavy-duty foil or several layers of foil until ready to serve.
