Crispy 5-Spice Pork

Crispy 5-Spice Pork
1 lb. (4 small) Raley's and Prairie Grove Farms boneless center cut pork loin chops
2 cups panko breadcrumbs
2 tsp. Chinese 5-spice powder
1 tsp. sea salt
2 eggs
2 tsp. chili garlic sauce
2 tsp. grated fresh ginger
Vegetable or peanut oil for frying
Shredded cabbage (optional)
Asian dressing (optional)
Chopped fresh cilantro (optional)

Prep: 15 minutes, Stand: 5 minutes, Cook: 5 to 6 minutes, Serves: 4  

1. Place pork chops one at a time in a large resealable bag and pound with a meat mallet until very thin.

2. Stir together breadcrumbs, 5-spice powder and salt in a shallow dish. Beat eggs, chili garlic sauce and ginger in another shallow dish. Dip each pork chop in egg mixture, then in panko mixture, pressing to coat well with crumbs. Let stand for 5 minutes.

3. Heat 1/2-inch of oil in a very large skillet. Add pork and cook for 2½ to 3 minutes on each side or until golden brown and cooked through. Drain on paper towels and serve immediately with dressed shredded cabbage and chopped cilantro, if you like.
