Creamy Lemon Chicken

Creamy Lemon Chicken
2 tbsp. organic butter
1½ lbs. Raley's Organic boneless, skinless chicken breasts, cut into 2-inch pieces
2 shallots, minced
1/2 cup chicken stock
1/2 cup white wine
3 tbsp. lemon juice
1 tsp. herbes de Provence
1/2 cup organic sour cream
Freshly ground sea salt to taste
Freshly ground pepper to taste
Fresh thyme leaves (optional)

Prep: 10 minutes, Cook: 20 minutes, Serves: 4  

1. Melt butter in a very large skillet over medium-high heat. Add chicken and shallots and cook for 5 minutes to brown chicken, turning once.

2. Add stock, wine, lemon juice and herbs to skillet. Reduce heat to low and cook for 5 minutes or until chicken is cooked through. Stir in sour cream and cook for a few minutes more. Season with salt and pepper. Garnish with fresh thyme, if you like.
