Pulled Pork and Pickle Grilled Cheese Sandwich

Pulled Pork and Pickle Grilled Cheese Sandwich
Ingredients
8 tsp. butter, divided
8 slices Alvarado St. Bread (any variety)
1 cup shredded Organic Valley Sharp Cheddar Cheese, divided
Raley's Smoked Alderwood Sea Salt to taste
1 ripe organic avocado, peeled, pitted and mashed
3 oz. organic shallots (about 2 medium), thinly sliced
1/4 cup chopped Full Circle Organic Pickles, divided
1-1/2 cups Prairie Grove Farms Pulled Pork with Barbecue Sauce
Directions

Prep: 20 minutes, Cook: 10 minutes, Serves: 4  

1. Spread 1 tsp. butter on one side of each bread slice. Top each with 1 tbsp. cheese and press lightly into the surface. Sprinkle lightly with smoked salt. Place cheese side down in a very large skillet set over medium heat. Sprinkle remaining cheese on half the bread slices and top with avocado, shallots, pickles and pulled pork.

2. Tent with foil and cook for 10 minutes or until cheese on the bottom is golden and crisp and pork is heated through. Close sandwiches.
