Super Easy Black Bean, Corn and Tamale Casserole

Super Easy Black Bean, Corn and Tamale Casserole
Ingredients
1 (14- oz.) bag frozen C&W The Ultimate Southwest Blend
1 (15.25- oz.) can corn, drained
3/4 cup red or green salsa
1 cup shredded Monterey Jack cheese
1 tsp. Mexican seasoning blend
2 (11- oz.) Garibaldi Turkey Tamales, half thawed
Diced avocado (optional)
Directions

Prep: 10 minutes, Cook: about 13 minutes, Serves: 6

1. Place vegetables in a 9-inch square baking dish. Microwave on HIGH for 4 minutes to thaw.

2. Stir in corn, salsa, cheese and Mexican seasoning blend. Cover and microwave on HIGH for 4 minutes. Stir well.

2. Carefully slice tamales and lay over the top. Cover and microwave on HIGH for 5 minutes or until very hot. Top with diced avocado, if you like.
