Yam Cinnamon Rolls with Tangy Parsnip Glaze

Yam Cinnamon Rolls with Tangy Parsnip Glaze
1 packet rapid rise yeast
1/3 cup lukewarm water
1 cup roasted or steamed mashed yams
1/2 cup milk
6 tbsp. softened butter, divided
1 egg
4 cups bread flour plus extra for kneading, divided
1/4 cup sugar
1-1/2 tsp. cinnamon
1-1/2 tsp. sea salt

6 tbsp. butter, softened
1 cup finely chopped pecans, toasted
1/2 cup packed brown sugar
2 tsp. cinnamon

1/2 cup very thinly sliced parsnips
1/2 cup water
1/4 cup packed brown sugar
1/4 cup butter, softened
1/2 cup powdered sugar
2 tbsp. whipping cream

Prep: 30 minutes, Rise: 1½ hours, Cook: 40 minutes total, Serves: 12  

1. Sprinkle yeast over water in a large mixer bowl; let stand until foamy. Add yams, milk, 1/4 cup butter and egg and beat well. Add 2 cups flour, sugar, cinnamon and salt and beat until smooth. Add enough remaining flour to make a soft dough. Knead using a dough hook for 5 minutes or until smooth and elastic.

2. Place in a lightly buttered bowl; cover and let rise in a warm spot for 1 hour or until doubled in size. Knead several times on a lightly floured board, then roll into a 12x18-inch rectangle; spread with butter. Stir together pecans, brown sugar and cinnamon and sprinkle over butter.

3. Roll up tightly, starting with the shorter side, and pinch seams to seal. Spread remaining butter in a 13 X 9-inch baking pan or onto a large baking sheet. Cut dough into 12 slices and place in pan; cover and let stand for 30 minutes or until rolls have doubled in size.

4. Preheat oven to 375°F. Bake for 30 minutes or until lightly browned.

5. While rolls are baking, simmer parsnips, water and brown sugar in a small saucepan for 20 minutes or until parsnips are tender and excess liquid has cooked off. Let cool, then puree with butter until smooth. Add powdered sugar and cream and beat until smooth. Spread over warm cinnamon rolls.
