Honey and Lemon Sweet Potatoes and Pears

Honey and Lemon Sweet Potatoes and Pears
2 Bosc pears
2 tbsp. butter
3 cubes Dorot Crushed Ginger (in the frozen foods section), thawed
1/2 of a 20-oz. package Earthbound Farm Roasted Organic Sweet Potato Slices, thawed
2 tbsp. honey
2 tbsp. lemon juice

Prep: 5 minutes, Cook: about 12 minutes, Serves: 4

1. Peel and core pears. Quarter, then slice crosswise into 1/4-inch bite-size pieces.

2. Melt butter in a very large skillet over medium-high heat. Add pears and ginger cubes. Cook for 5 minutes, stirring frequently.

3. Add sweet potato slices; cook and stir for 5 minutes more.

4. Stir in honey and lemon juice; cook for 2 minutes more.
