The Ultimate Turkey Sandwich

The Ultimate Turkey Sandwich
2 tsp. pesto
1 tsp. butter, softened
2 slices cracked wheat sourdough or cheese and garlic sourdough bread
1 oz. smoked mozzarella cheese, thinly sliced
3 oz. turkey, thinly sliced
2 to 3 strips roasted red peppers, (about 1/4 cup) drained

Prep: 10 minutes  Cook: 5 to 10 minutes  Makes: 1 sandwich

1. Stir together pest and butter; spread on one side of each bread slice.
2. Place one bread slice, pesto side down, in a panini press or large skillet; top with cheese, turkey, peppers and second bread slice. Cook until cheese is melted and both sides of the bread are golden brown.
