Lemon Cherry Coconut Cookies

Lemon Cherry Coconut Cookies
1/2 cup butter, melted
1/4 cup flour
2 eggs
1 (16- oz.) box Raley's Meyer Lemon Cake Mix
3/4 cup white chocolate chips
2/3 cup unsweetened fine shredded coconut, toasted
1 cup fresh cherries, pitted and quartered

Prep: 15 minutes, Cook: 15 to 17 minutes
Makes: about 2 dozen cookies

1. Preheat oven to 350°F and line 2 large baking sheets with parchment paper. Stir together butter, flour, eggs and cake mix in a medium bowl. Stir in chocolate chips and coconut, then lightly stir in cherries.

2. Drop tablespoons of dough onto baking sheets. Bake for 15 to 17 minutes or until cookies are set in the center.

3. Let cool on baking sheets, then store in an airtight container.
