Pulled Pork Corn Muffins

Pulled Pork Corn Muffins with Sriracha Honey Butter
1-1/4 cups cornmeal
3/4 cup flour
1/4 cup sugar
1 tsp. sea salt
1-1/4 cups milk
1/4 cup butter, melted
2 eggs
2/3 cup shredded sharp Cheddar cheese
1/3 cup sliced green onions
2/3 of a (14-oz.) pkg. Prairie Grove Farms Pulled Pork

Prep: 20 minutes  Cook: 20 to 25 minutes  Serves: 12

1. Preheat oven to 400°F and line 12 muffin cups with paper liners. Stir together cornmeal, flour, sugar and salt in a medium bowl. Add milk, butter and eggs and stir until almost incorporated. (Mixture will still be lumpy.) Lightly stir in cheese and onions.   

2. Spoon equal amounts of batter into prepared muffin cups. Place equal amounts of pork into the center of each and press down lightly.

3. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Serve warm with Sriracha Honey Butter.
