Fattoush Chicken Salad

Fattoush Chicken Salad
8 cups coarsely chopped hearts of romaine
1 cup diced rotisserie chicken meat
1 cup cucumber, peeled and diced
1 cup tomato, diced
1 cup pita chips, coarsely broken
1/2 cup red onion, quartered and thinly sliced
1/4 cup lemon juice
1/4 cup extra virgin olive oil
1 tbsp. chopped fresh mint
1/4 tsp. sea salt
1/4 tsp. sugar
1/4 tsp. freshly ground pepper

Prep: 20 minutes  Serves: 6

1. Place hearts of romaine, diced rotisserie chicken meat, peeled and diced cucumber, diced tomato and coarsely broken pita chips and red onion in a large bowl.

2. Whisk together lemon juice, extra virgin olive oil, chopped fresh mint, sea salt, sugar and freshly ground pepper. Drizzle over salad and toss well to coat.
