Harvest Apple Sundae
1 baking apple
1 tbsp. heavy cream
1 tbsp. apple juice
1 tbsp. packed brown sugar
Vanilla ice cream
Ground nutmeg (or cinnamon)
Slice about 1/2-inch off the top of apple. With a melon
baller, remove core and enough apple to hold a scoop of ice
cream. Do not cut all the way through to bottom. Prick sides
with a fork. Mix together cream, apple juice and sugar; pour
into cavity. Microwave apple for 3 to 4 minutes or until
tender. Pour sauce from cavity into baking dish; set aside.

Transfer apple to serving dish. Place a scoop of ice cream
in cavity; spoon on sauce, then dust lightly with ground
nutmeg or cinnamon.

Makes 1 serving.
