Chicken and Cheddar Potato Pancakes

Chicken and Cheddar Potato Pancakes
2 cups prepared mashed potatoes
1/2 cup prepared baking mix (such as Bisquick)
1 cup shredded rotisserie chicken (in our Deli)
3/4 cup thickly shredded sharp Cheddar cheese
1/2 cup crumbled, crisp cooked bacon
1/3 cup sliced green onions
1 egg
2 tbsp. butter

This recipe is the perfect camping comfort food! Serve for lunch or for dinner on a chilly day, or turn into breakfast by skipping the chicken.

Prep: 10 minutes, Cook: 5 to 8 minutes, Serves: 4 to 6

1. Stir together potatoes and baking mix in a medium bowl. Stir in chicken, cheese, bacon, onions and egg. Using wet hands, shape into 8 equal patties.

2. Melt butter in a very large skillet over medium heat. Carefully cook patties for 3 to 4 minutes on each side or until golden brown.
