Kale and Jerky Cobb Salad

Kale and Jerky Cobb Salad
1/4 cup extra virgin olive oil
3 tbsp red wine vinegar
1 tbsp. spicy brown mustard
1 tbsp. honey
1 clove garlic, minced
Salt and pepper to taste

8 cups lightly packed torn kale pieces
1 cup halved grape tomatoes
3 hard boiled eggs, coarsely chopped
1-1/2 cups cooked, diced chicken breast
3/4 cup blue cheese crumbles
1/2 cup small torn pieces soft beef jerky

Layer all salad ingredients except kale in a large canning jar before leaving home – this lunch or dinner salad will come together with no prep or mess. Make sure to keep well-chilled. Prepare dressing ahead to streamline even more.

Prep: 25 minutes  Serves: 4  

 1. Place all dressing ingredients in a jar with a tight-fitting lid; shake well to mix. Cover and refrigerate until ready to serve. (May be prepared up to1 week ahead.)

2. Place all salad ingredients in a large bowl. Toss lightly with dressing and serve within 30 minutes.
