Beef with IPA Pickled Mustard Seeds

Beef with IPA Pickled Mustard Seeds
Pickled Mustard Seeds:
3/4 cup rice vinegar (unseasoned)
1/3 cup IPA
1/4 cup honey
1/2 tsp. sea salt
3/4 cup mustard seeds

IPA Marinated Beef:
3/4 cup IPA
2 tbsp. honey
2 tbsp. spicy brown mustard
1 tsp. sea salt
1 tsp. freshly ground pepper
1 (2-lb. to 3-lb.) Raley’s Beef tri tip roast

This makes a large batch of pickled mustard seeds. Serve liberally over sliced beef and serve remaining over sandwiches or other grilled meats.

Prep: 20 minutes  Marinate: several hours or overnight  Cook: about 20 to 25 minutes 
Serves: 6 to 8

 1. Bring vinegar, IPA, honey and salt to a boil in a small saucepan; add mustard seeds and let simmer, stirring occasionally, for 5 minutes. Set aside for at least one hour. Cover and refrigerate until ready to serve.

2. To prepare marinated beef, place beer, honey, mustard, salt and pepper in a large resealable bag;  add beef, seal and refrigerate for several hours or overnight for best flavor.

3. Remove beef from marinade and grill over medium heat for 7 to 10 minutes on each side or until beef is cooked to your liking.

4. Let stand for 5 minutes before slicing thinly. Top with pickled mustard seeds.
