Creamy Chipotle Tostadas

Creamy Chipotle Tostadas
2 links Field Roast Chipotle Sausage, halved lengthwise
1 large jalapeno pepper
1 ear fresh corn, husked
4 medium-sized handmade style flour tortillas
Olive oil cooking spray
4 oz. 1/3-less fat (Neufchatel) cream cheese
1/3 cup Frontera Chipotle Salsa
1 cup shredded Mexican blend cheese
1/2 cup sliced green onions

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Grill sausage, pepper and corn over medium heat for 5 minutes or until lightly charred. Slice sausage 1/4-inch thick. Remove seeds and stem from pepper and chop. Cut corn away from cob.

2. Coat tortillas liberally with cooking spray and grill until crisp and lightly browned. Spread with cream cheese and salsa, then top with shredded cheese, sausage and vegetables.

3. Grill for a few minutes more over indirect heat or on a piece of foil until cheeses are melted and toppings are hot.
