Bananas Foster

Bananas Foster
1/4 cup butter
5 ripe bananas, peeled and sliced
1/4 tsp. cinnamon
1/4 cup brown sugar
1/2 tsp. vanilla extract
1 quart Sunnyside Farms Vanilla Bean Ice Cream
6 (12- oz.) cans Raley's Cream Soda
3/4 cup spiced rum (optional), divided

This creamy spin on the restaurant classic is best served with a spoon and a straw.

Prep: 10 minutes, Cook: 5 to 10 minutes
Freeze: at least 6 hours, Serves: 6

1. Melt butter in a large frying pan. Add bananas and sauté, sprinkling with cinnamon. As bananas begin to fall apart, add brown sugar. Cook until brown sugar is combined with bananas. 

2. Remove from heat, then mash until smooth. Stir in vanilla extract.

3. Empty ice cream from container into a large bowl, reserving container. Pour banana mixture over the top, then stir together so bananas are swirled throughout the ice cream. Return mixture to ice cream container and freeze for 6 hours or more. (If there is additional mixture, also freeze.)

4. Scoop into 6 glasses, then top each with a can of cream soda and
1 oz. of rum, if you like.

A variation on this would be to use coconut ice cream. Then sub Pineapple Cider for the cream soda and rum. It would be tropical with the bananas, coconut and pineapple.
